This week we went with Maple Pecan Muffins
3 Ripe Bananas (mashed)
3 Eggs (whisked)
¼ Cup Pure Maple Syrup
1 Tsp Pure Vanilla Extract
¼ Cup Coconut (GF) or Whole Wheat Flour
¼ Tsp Cinnamon
½ Tsp Baking Soda
½ Tsp Baking Powder
¼ Tsp Salt
½ Cup Pecans (chopped)
¾ Cup Dark Chocolate Chips
1 Scoop Silver Star Nutrition Natural Protein
Preheat oven to 350 and line the cupcake tins with paper liners.
Beat bananas and eggs together until fluffy. Beat in maple syrup, and vanilla; mix well.
Add in coconut flour, cinnamon, baking soda, baking powder, Silver Star Nutrition Natural Protein, and salt; beat until just combined.
Fold in pecans and chocolate chips.
Fill muffin cups about 3/4 full.
Bake for 20 to 22 minutes, rotating muffin tins halfway through.
Cool completely before serving.
